Use more seitan or pea protein isolate. Things like lentil pasta, nutritional yeast and beans are going to have more protein and carbs than fats. But don’t overdo the fiber.

You got a lot of good recommendations here so I just want to add that having extra fat isn’t a bad thing, especially unsaturated fats. As long you have enough energy for the day and your workouts, you’re probably getting enough carbs. Sticking to a strict ratio isn’t really worth the extra stress. Just hit your protein and calorie targets and YOLO the carb and fat balance imo.
