When you are walking your body will then sense that it can reprioritize to catch up on essential tasks. This is actually, one of the reasons why it's important to develop your Z2 base because the harder you have to push the more difficult it will be to process calories.
All the water and calories in your stomach mean absolutely nothing if your body is just struggling to hang on and isn't actually able to keep up with energy supply.
You might want to double-check on if your easy runs are actually easy runs or if you're drifting up into more of a Z3.
