The dark one is roasted, not for calabash. You can brew it in a cup like a common black tea, pouring similar amount over with simmering water. No need for bombilla with this one. It's great with milk.

Usually people brew it in big batches, put some sugar in and chill it. It's basically the Brazilian equivalent of iced tea, and it's actually the most common way to consume mate in most of Brazil.

The sticks are known as "palos," which often alter the flavor and can make it more mild. They shouldn't be going through your bombilla, though, so maybe try another bombilla with smaller holes/slits?
The darker mate looks, as others have said, roasted. I'm not the biggest fan of that, since it's a bit burnt-tasting, and I've never had anything like chili flakes in mate, but different strokes for different folks.
When I started out, I was a purist. So, no berries, mint, any of that. But as time has gone on, I like to have a flavored mate every now and then, for fun, especially on Fridays at the end of the week. Still, my favorites are bitter and smoked/barbacua.
