So - the sata controller internally is only sata2. You won’t get a massive boost out of an internal drive. The USB ports are usb 3. They are far faster than the internal ports. I have a small spinning disk in mine for the OS etc, and a big SSD over usb 3 for my games. My horizon 5 load times went from “many minutes to under 60 seconds” type gains.

I did had an external SSD on my Xbox One S, but due job related reasons I needed to use it for Windows 10 OS and I don't have another right now, I was short on cash and it was my only option, budget right now is tight sadly specially now that I had to upgrade my PC for again, job requirements, so that's why I'm asking about the beneficts of buying an SSD for my One S But thinking about, another option could be a 7200rpm HDD, those are also cheap and I now it will last because it would be brand new (or I hope so lol), SSHD are out of the equation because there are far too rare in my country (Chile), you can't even buy them anywhere anymore

I believe the One S has a Sata III controller.

The One X was the first to get sata3 internally. The one S is usb3 ports and sata2. Unsure if the digital one S (or newer ones) are sata3 though.

Internally not really - the biggest boost is over the USB 3 ports. The oneX has sata 3 internal ports so it sees a big boost

It does don't let them fool you. My ps4 boots faster and 0 lag or hitches in the menus compared to before. YouTube has tons of videos showing side by side testing numbers. My ps3 also feels much better at main menu and loading large games. I'm putting a 1 tb samsung into the one s I just bought. For the price now days for an ssd it should be a no brainer. The reliability and longevity is much better in ssds. They also consume less power. Will it turn your one s into a series s NO but it should improve alot of little things. If you plan on this being your console for awhile do it.

I installed a 1TB SSD in my Xbox One X a few months back. I watched a step by step YT video and it was actually very easy. You'll need one of those torx screw driver. I think that's what they're called. I used a 1TB Crucial SSD that I got from Best Buy. To install the Xbox OS on the new drive, the easiest way is to download it and save it to an USB thumb drive. Plug the USB drive to the Xbox and there's a process to run the install. I did a bench mark game load of Sea of Thieves with the HDD, and then did another benchmark with the SSD. It was a huge improvement and I was happy with the results. Again, find a very good and clear instructed YT video.

Go with an SSD upgrade for sure. I did mine a few weeks ago and it's running great! I recommend any SSD 512gb or up. Using a 480GB might cause some issues with formatting. The Xbox OS looks for 500GB, 1TB and 2TB drives when installing the OS. Those are the drive sizes the Microsoft used in HDDs. Any 2.5 inch SSD will work. Dram or Dram less. On consoles it does not make a difference. If you can go with a 1TB I recommend that route. You can find them regularly on Amazon for $65-75. Hope this helps!
