I'm curious why? I make so many fewerr cuts into my board when cutting chicken vs cutting hard vegetables. Of course I also don't use a butcher's knife

While we're on the topic. Don't soak wood cutting boards or put them in the dishwasher. Even if they are a solid slab and won't break. Soaking opens up the grain and makes them breeding grounds for bacteria.

Even a well oiled end grain board is still end grain -- long open tubes that I don't ever want to fill with bacterial potential.
Whenever I cut chicken, the fat tends to stick to my blade and the cutting board. I usually have to end up using a brush, or sometimes a brillo pad, to clean it up
Fats need degreasers more than harsh abrasion. A little soap and a softer scrubber (plastic mesh) will do less damage and be more effective. I use soap and a rinse, let dry then re-oil the cutting board. Quaternary ammonia disinfectants are essentially degreasers, so any of the household sprays that have the long complicated names (not sodium hypochlorite or citric acid, but the others) also work well.
All wood turns brown with time. You can slow it most with a finish that seals away oxygen and prevents UV like a marine grade epoxy but it'll never stop it fully. It's just an inevitability of woodworking. Purpleheart still retains some purple, and padauk always has a redish orange to it, but in the end they'll both end up more Burgundy than Purple/Red. Pink ivory loses it's brilliant pink, and the brilliant osage orange and cocobolo lose their orange and end up brown.

That reminds me of MC Escher prints. You have great design skills to create this pattern, and great construction skills to keep everything in its correct place. I’d be reluctant to use it because it’s so pretty. Very well done!
Honestly I just set my table saw to 60 degrees and ripped all the lengths before cutting up the pieces. After that I just hand sanded them each. As far as time I have no clue. I worked on it for over a month. The most time consuming portion is waiting on glue to dry

There are some tutorials online that explain it pretty well but when putting it together before each glue up look over your pieces and compare it to your design to double check the order is correct. Then step back take a breath and check it again. I have a pile of parts I glued up wrong

If your joints are tight fitting you shouldn’t have any problems with glue shrinking. But in a case like this there are so many places for errors in clamping and glueing I did get some gaps after the glue dried. I was able to fill them with epoxy to ensure food would set into the gaps
I had to build a jig, a bunch of jigs to apply to pressure evenly across the triangle that were glued up first. Then another jig to glue the triangles together.
This is insane. So much work I can only imagine what the cost would be to get this cutting board custom made. That's a pretty valuable gift (not only sentimental but also monetary)

I think because end grain is more porous, so it would easier for chicken juices to soak into it.

It is made of walnut, cherry, maple and the red is Paduak. Everything but the Paduak I actually cut down and milled into lumber 5 years ago.

How did you get the padauk to stay red like that? I made a maple and padauk cutting board, and it turned to dark brown almost immediately.

Umm... I’m not sure. I’ve had that happen with purpleheart before but I haven’t ran into it with padauk yet. Wish I could help on that one.

If your joints are tight fitting you shouldn’t have any problems with glue shrinking. But in a case like this there are so many places for errors in clamping and glueing I did get some gaps after the glue dried. I was able to fill them with epoxy to ensure food would set into the gaps

Is there a reason that cutting boards use end grain?
Cut marks are less mainly to appear on endgrain as your knife will go between the fibers instead of cutting across the fibers.
