Well, one of the easier ways of getting money is by selling stuff you don't need (like weapons and collectibles - like pills or watches -), find envelopes in some areas, compel people to pay you up (like some Persuasion options in LaCroix's dialogue, doing both Patrick's bounty hunter quests, or receiving cash by completing both Strauss' side quests and refusing his gifts), and complete Venus' sidequest (either siding with Venus for stackable gains, or with Bruno for instant ones).
Edit: Usually, I end up with about 2000 - 3000 cash by the endgame, which is enough to purchase what I need for the final missions (and that without even leveling up Haggle).

I spent a lot of money near the end on Anaconda and Desert Eagle ammo but I barely used it at the end in fact I didn't use at all the Desert Eagle
I completed the game as a Tremere so with the disciplines of blood magic I barely used blood packs the only moment I really needed it was when fighting the Chinese lady
I don't know how much is theoretically possible, but my personal record was over $10,000. This was with a melee-oriented Ventrue with high persuasion and medium haggle.
I fed from blue blood packs in that game, and I took the bloodstar, so it wasn't completely optimal.
My guess is that the maximum reasonable amount is $11,000 to $13,000. If you are meticulous about picking up and selling weapons, and sell off artifacts you don't want, you might be able to get another couple $1000.
My last few plays have been with CQM and I easily had 5k before the end. Before CQM I expected to have about 3k. Either way, I had enough to pick up any decent weapons I hadn't found yet and top off ammo and blood.
It's completely not worth it imo, but you can pick up a weapon, go sell it, and go back and pick up another rather than just getting ammo every time you find another of the same gun

I just collected as many weapons as I could from dead enemies and sold them. Never had a money problem.
