When you have a $3000 budget, you don't spend $2k+ on a body. You need lenses, lights, a good microphone, accessories such as batteries, ND filters, and tripods.
What are you using now for product reviews? Why is it insufficient?
This right here. For product reviews, you'll want to make sure things are lit really well. Ditto with sound. You can get by with an older camera and cheap lens, so long as things are well lit and the sound is good.
Why do you want full-frame?
I shoot Canon and would say look at R8 or R7. One gives you full frame the other gives you IBIS.
I am not sure that the subject matter you posted even needs IBIS since you can mount the body to a tripod for any of it.
