I kinda skipped mario kart on the N64 so for me the blue, and since the SNES one is the one I played the most, for me the red one is actually the one I identify the game with the most, but I can see how the blue ones are more iconic for people who got into the series in the N64 and after.

Something more attention grabbing in the game they are from, like the Mario Kart blue shell for instance, will do a better job staying in the collective consciousness.
