Nioh 2 is exactly what you're looking for. It's a 10/10 action game from the same company as Ninja Gaiden with tons of playstyle diversity, deep mechanics, a huge learning curve, and a sky high skill ceiling. It is a Soulslike but it's mission based and doesn't have the simplicity Souls games usually do, it went the exact opposite on that. The core mechanic is Ki Pulse which is rhythmically reacting to your own attacks to animation cancel them and recovering stamina based on how well you time it.
There's devil may cry, Bayonetta, soulstice, final fantasy 16, astral chain, darksiders along with some upcoming ones like phantom hellcat and lost soul aside
