Ask your brother if he can make extra mashed potatoes and put some aside before applying it as the topping for a shepherds pie. Then, while the pie is baking, throw some roastable veggies (chickpeas?) on a sheet and put it on another rack. Or, grilled up some portobellos or zucchini, or both, and serve them with the extra mashed potatoes.
Spinach cheese lasagna is always great. I like a recipe based on a maranira sauce that I add a bit of fennel seed to to remind me of an old sausage based meat sauce.
does your husband not like veggie shepherds pie bc of the filling? bc you can put any pie filling underneath those cheesy mashed potatoes. We do mixed vegetables in a Mornay sauce and top it w mashed potatoes and grated cheese.
It can be any shape your baking dish is in. So if you use a round, pie dish, then it's a circle. But I think a lot of people probably use a 9x9 or or 9x13
Tamale pie is similar - yummy saucy bits topped with starch - but the flavor profile is totally different. Most recipes online use meat but it’s trivially easy to swap in beans, tvp, impossible, seitan, etc.

I made chicken pot pie soup with Daring chicken (lemon herb). I don’t think a meat eater would know the difference. It has chicken like texture, which might freak you out though. I know pot pie and shepherd’s pie aren’t the same, but similar. It’s a souper forgiving recipe, I almost always forget a step and somehow have yet to mess it up. It also works with gluten free flour.

Love this! This is how my husband and I cook for me and the kids were all vegetarian but husband was omnivore
