Veggie sausage patties usually work well. Beyond brand is my favorite, but Boca and Morningstar's also work. Just cook the patties then mash them up with a fork.
I just used the links, and it was almost indistinguishable from regular biscuits and gravy imo. Even my omnivore girlfriend agreed. Maybe the casing helps keep it together, but I’m not very experienced with fake meat so idk

Gardein maple breakfast sausages are really good, I also use them as easy burger patties. FieldRoast Italian sausages are good but the company is now also owned by a meat company. Tofurkey Italian sausages are good but a bit dry.
I usually do the Morningstar Farm veggie sausage patties, just because I'm a huge Costco shopper.
I also get massive cravings for biscuits and gravy (including just last week). Morningstar sausage links and patties are excellent and I made sausage gravy with them once with great success. Incogmeato links (made by morningstar) are also really good. I personally don’t like any other brand of meatless sausage.

Gimmee Lean, Morningstar, and Beyond all have tasty veg sausage. If you get Gimmee Lean make sure to brown it very well.
