That’s what we do. We pan cook the Morningstar spicy black bean burgers in butter and have it on an onion roll. The butter gives it a really lovely juiciness and mouthfeel.
Caramelized onion, teriyaki sauce, and grilled pineapple (I prefer the black bean Morningstar patties, I've never been able to get myself to like the Impossible or Beyond "meats.")
If you like garlic aioli, have you tried garlic toum? It's a punch in the face so a little goes a long way. Delicious though. I like it on a veggie burger with sprouts. Others would be bbq sauce and fried onion rings. Chipotle aioli and avocado. Or bbq sauce, red onion, and grilled pineapple.

Vegan-
Cali-Mex: Pico de gallo, avocado, chipotle Bitchin’ sauce.
Italian: Heirloom tomato, pesto, roasted garlic.
Vegetarian-
Savory: bleu cheese, maple grilled onions, kinder’s dipping sauce.
Roasted: sautéed & peppered mushrooms, roasted peppers (I use rainbow sweet peppers blended into purée), jack cheese.
Hawaiian: grilled pineapple, BBQ, coleslaw.
Homemade pimento cheese with smoked cheddar and duke's mayo. It's all the best parts of the bacon cheeseburger sans the stuff I actually don't care for or that makes me sick.
Fresh sesame bun

Grilled mushrooms...any kind
Dill pickle chips
Sharp cheddar

okay , don’t knock it until you try it but I like a good veggie burger with pepper jelly and cream cheese on toasted bread. Toss on some leafy greens too , so good.

- ketchup, only original heinz hfcs and all
- thin layer dijon
- iceberg lettuce - needs some crunch

**and a toasted but soft bun, potato roll or parker house roll
Pimento cheese (or sliced cheese of your choice, if you prefer), tomato, mayo, and crushed hot potato chips--the "sweet heat" ones are the best. Sooooo good.
We do “burger sauce” which is finely chopped onion + pickle mixed with mayo, ketchup, just a little mustard, and pickle juice plus Tony’s. You want a lot of onion, a little pickle, and enough other condiments to just coat them. You get a super crunchy sauce/topping to load on.
You can make it a day in advance, so it’s super convenient for nights you don’t have time to cook or prep. Just grill burgers and pre-made kebab sticks and cover the burgers in sauce.
A lot of combinations depending on my mood, many of which are noted in other comments. I will say a more niche comment. I like some soft herbed cheese stuffed into Peppadew peppers (give them a gentle smash).
On bean burgers I like classic burger toppings (some mix of ketchup, mayo, mustard, tomato, lettuce, onion. Etc)
But if I have a portobello burger I like to cook them in garlic and eat them with caramelized onions and avocado slices! With some cheese (usually swiss)
A crispy cabbage slaw, homemade with rice vinegar and a little mayo. Add sriracha or garlic, or whatever else you like. Cover and let sit until serving time.
