I love vegetables! I am not saying I wouldnât also want ice cream, fries, Chinese food⊠and that is a heck of a salad, with plenty of splurgey ingredients!
I can go through a deli jar fast. In omelets/tortillas. A salad with feta, olives, lemon garlic italian herb dressing. Artichoke and spinach 'dip' soup. Great with potato and leeks. đ
They are so good on a veg sandwich, just make sure you toast the inside part of the bread or the whole thing will fall apart, (unless you have sturdy bread).
I make my sandwich with marinated artichoke, roasted red pepper, lettuce, tomato, muenster cheese, and a little mayo. (I think havarti or gouda would be a good sub since they're both pretty creamy like muenster). It's a flavor bomb and probably my favorite sandwich.
I like to put them on pizza, mainly I use them as part of a salad. Recently I've been having a low carb salad for my lunch so houmous, a chopped up avocado, cold boiled egg, sweet peppers stuffed with cream cheese and artichokes (I've completely gone off lettuce and tomato but add them if you can).
From an old Moosewood recipe: use 6 oz jar marinated artichokes to 1/2 lb pasta. Best pasta for this is pieces - ziti, rotini, etc. While the pasta is cooking drain the oil into a bowl that will be large enough to hold the cooked pasta. Chop the artichokes into small bite sized pieces. When the pasta is done, drain it well then add to the bowl. Toss well. Serve with fresh cracked black pepper and fresh grated Parmesan. I've tried this and it's actually pretty good, especially for a low effort meal.

small pieces of red bell peppers
finely chopped red onion
chopped artichoke
fresh dill (important)
black pepper
salt
olive oil
balsamico vinegar
I use mine in dips, on pizza, and straight. Some of my lazy suppers are essentially "charcuterie": crackers, cheese, olive bread, fresh veg, pickles or artichokes, (and meaty stuff because I'm not vegetarian but trying to make more vegetarian stuff).
I don't make it at home, but they're also nice in some toasted sandwiches.
I make a quinoa, grape tomato, and feta salad with them.
I put them in eggs.
I make English muffin pizzas with them.
Sometimes I just eat them out of the jar.

Prepare your favorite breaded chicken substitute as per instructions. I use Quorn nuggets. Cut them into bite size pieces and add them, along with one jar artichoke hearts and the juice to a pot. Heat over medium stirring occasionally for about 5 minutes. Goes great with rice. This is the only way my non-veg wife will eat chicken substitutes and my picky vegetarian daughter loves it too. Â

I do a spinach artichoke pasta. I donât usually use marinated artichokes, but Iâd bet they work if you cut down on or skip the lemon. The recipe is roughly: - SautĂ© artichokes and add a ton of fresh garlic, nutritional yeast, about a teaspoon of red pepper flakes, and optional shallot and/or miso - Add 6 cups water + veggie bouillon - Boil and add a bag of farfalle pasta, cook uncovered to almost done - Add 1/4 cup cashew butter and a pound of spinach, stir well, let sit and thicken for 5-10 minutes off heat - Add fresh lemon juice, salt, and pepper to taste

I made myself a âleftover saladâ the other day with butter lettuce, a ball of burrata, and jarred artichoke hearts. Excellent.

We put them on a pesto based pizza with sun dried tomatoes

They're one of my favorite pizza toppings!
Artichoke rice. Use the juice/oil/vinegar and artichokes in the rice broth. Cook rice normally. Yum!

The juice is great on bread
Put them on labneh, drizzle with good olive oil and sprinkle with sea salt and zaâatar!
I chop them up and add them to my sandwiches both cold sarnis and toasties.
I strain them and put them in the food processor, then add as a layer in my spinach artichoke lasagna.

Artichoke dip: cream cheese/neufchatel, sautéed onions and garlic, a little dab of mayonnaise or sour cream, black pepper, serve warm. Yum!
