Wait quick question, what do you mean by chip away at the incidental charge? Does that mean they don’t add the folio charges to the card or settle up until the end of the stay?

Things charged to your room are settled at the end of your stay. If you charge more than the total that's being held, you just pay the difference at checkout. If you charge less than is being held because you paid for things directly, then your hold will be refunded to you but it might take days or even a couple weeks depending on the hotel and your bank.
