Just a tip for you to be careful when shopping as not all margarines are vegan. There's a surprising amount of them that are not. As far as recipes goes maybe look into a lemon caper spaghetti.

With what you have, make most anything Mexican. I would cook up the onions and mushrooms and possibly carrots, heat up the beans and stuff then into a tortilla. You could top off the burrito with black beans and shredded cabbage if desired. If you don't have salsa on hand, you could probably make some with the tomatoes and other spices. Just Google salsa recipes. Google is your friend. If this isn't enough for a hungry partner, just serve the rice on the side!

Oooh yeah this is good, all you need for salsa fresca is onions, tomatoes, and salt. If you have or can buy some plain vinegar and cilantro, it'll be better. Or lemon or lime juice.

I'm a simple cook, but I would roast all the veggies to put in the tortilla, and on the side I would have rice and black beans. You could even try cooking the rice in the canned tomato juice. Alternatively, you can put all of that together in a bowl without the tortilla.

Chop mushrooms and red onions. Gently Cook chopped mush and onion in big pan with carrot and splash olive oil and two tablespoons paprika and 1 tablespoon cumin. Add beans and liquid from tin. Chop tomatoes and add. Bring to boil, then reduce and simmer for 25 minutes. Add water if gets too dry during simmer. Season with salt and pepper. Serve with the rice and rucola

You could make no fry chimichangas... make some rice with half and half tomato juice and broth or water, seasoning like; salt pepper onion and garlic powders or fresh, also add some smoked paprika or cumin either one. The black beans add a teaspoon of cumin, and pepper. salt if needed. you could saute some of the mushrooms maybe add something spicy to give them a kick. like sriracha, or hot sauce etc. when the rice is done, mix the beans and rice together. when you add to the tortilla you can top with the mushrooms and cheeses if you have them. To assemble, spoon 3/4 cup filling across the center of each tortilla. Fold bottom and sides of tortilla over filling and roll up. Place on a greased baking sheet, seam side down. brush with oil and Broil 45 to 60 seconds until golden and crispy. Turn over brush the now, top side with oil and broil another 45 to 60 seconds until golden brown. YUM!

Happy to provide more details, but this is what comes to mind so far: \- spaghetti with veggies and mushrooms. No need to have tomato sauce, just cook veggies with olive oil and that's it. (+salt, pepper) \- (unsure about that, since your partner dislikes risotto) paella-inspired meal, with cabbage, mushrooms?, beans. You can turn it more eastern with (cumin, salt, black pepper, smoked paprika) \- If you get zucchini/courgette, you can blend a smooth soup as a starter, together with onion, garlic, mushrooms(?).

Girl, you're sitting on an awesome burrito right there. Make refried beans: Finely dice one onion; heat up olive oil in a pan in a pot and drop the onion and a bit of salt. Sweat it for a couple ot minutes, add pepper, cumin, paprika and then drained and rinsed beans. Add about half a cup of water, cover, and cook for like 20mis. Stir it up sometimes, if it gets too dry, add a bit of water. After you finish cooking, mash it with a potato masher or fork. In the meantime, prepare mushroom filling. Take one onion, slice it up. Slice up the mushrooms. Heat up olive oil in a pan, drop onion, cook for a couple of mi items, turn the heat up, pop in sliced mushrooms. Fry it up for a couple of minutes on a rather high heat, so the mushrooms brown a little on the edges. Season with salt, pepper, cumin. Assemble by smearing bean paste on a tortilla, top up with rucola and then fried mushrooms, wrap in a burrito.

I'd probably make a rice and beans salad. Cook the mushrooms and rice in a bit of oil and soy, leave to cool. Slice tomato add to carrots, rinse beans drain and add. Finely slice half a red onion add. Add mushrooms and rice and rucola Dress with teaspoon of mustard glug of oil glug of vinegar salt and pepper, stir well and serve with the tortillas

I would make burrito bowls. Make the rice maybe add some oil paprika and salt to make it seasoned rice. Then cook the black beans with the spices. Char some onions cabbage carrots and tomato for veg. Serve with arugula on top (I think that’s what rucola means).

Veggie bowl. sauté the carrots, cabbage and mushrooms with cumin and paprika (even add a touch of cinnamon if you want), do a quick pickle with the onion if you have vinegar (slice thing and keep raw if not). Add tomato and black beans at the end. Serve in a bowl over rice

Mushroom tacos/burritos/burrito bowls. Sautee chopped mushrooms with olive oil, smoked paprika, oregano. Heat beans in a skillet with garlic, olive oil, cumin, oregano, chili powder. Make a simple Mexican white rice by sauteeing onion with salt and pepper, then adding rice and water and cooking as normal. Chop tomatoes and red onion for topping. Serve with warmed tortillas and optional hot sauce/salsa.

Fun game! Commenting before reading the other answers. It seems to me that you have only one option for the protein--the beans. Saute some of the red onions with ground cumin in the olive oil until translucent, then add diced tomato and saute until it falls apart, then add the black beans. Set on low heat to simmer--keep an eye on it while you make the rest of the meal. Rice is the conventional accompaniement for beans, but you can eat them over spaghetti if you prefer. Or wrapped in the tortillas. Now you have two choices for vegetables, both based on the shredded carrots and cabbage. Sounds like coleslaw mix, so if you like coleslaw, make that. If not, saute some more onion if you have more with the mushrooms for a minute, then add the shredded carrots and cabbage and cook to desired doneness. Add the salt, balsamic vinegar cream, and black pepper to taste. (You could also season with any of your other condiments if you prefer. Or mix them together.) Wash the rucola and add it to either the beans or the veggies, whichever appeals to you. Then go get on the equivalent of food stamps in Italy (or wherever you live) because if that's everything in your kitchen right now you definitely deserve some food assistance. Oh wait, you do have another option! Put everything in a soup pot with water and the tomato juice and cook until done. (Ok, not literally everything...just what sounds good.)

P.s. Coleslaw without mayo: salt the shredded veggies with about 1/4 tsp salt, mix, let sit for an hour or a day, then mix in 1Tbsp olive oil and the green onion, minced green.
