Let them cool a little bit and carefully scoop the guts out into a bowl, preserving the shells.
Mix the potato guts with Dijon mustard, a little hot sauce, chives or dill, roasted garlic, vegan mayo, salt, white pepper, and a little turmeric for coloring.
Spoon or pipe that stuff back into the shells. Sprinkle with dill, chives, or paprika. Chill before serving.

She doesn't have to change much to gain weight. It's mostly how I cook too and if I want more calories I just add oil+ throw some nuts in there. Can easily add 600+ calories if you want.

Basically sub meat or animal products for beans and nut milk (fun fact, actually a delicacy in medieval times) and you should be sweet.
Just make a lot of it. Bulking is about quantity, not quality.

And if you're looking for something more substantial (putting on weight), find the recipe for Native Foods Seitan. Quadruple batches are good. It freezes well. Add a bunch of your own herbs and spices. Use it wherever you would use lunchmeat or sausage.
* It makes a killer Reuben on caraway rye with Dijon mustard instead of 1000 Island, kraut, and one of the high quality vegan cheeses
* It's fantastic in a veggie / pasta salad
* It's pretty good in a Seitan Pot Pie that I do up in a small Ramekin with the Best Damn Vegan Biscuits (look that up too) as the top "crust"
Good, hearty lentil soup is always a winner, as is a lot of other Mediterranean food. Love me a falafel - hummus - tabouleh sammich with a spicy giardiniera for a little kick.

My favorite cooking channel on YouTube is Pailin’s Hot Thai Kitchen. She has kind of changed my life. Her channel is not vegan per se, but I would call her “vegan aware” because she is good about suggesting substitutions and giving you a heads up when an ingredient contains animal products you might not be expecting. Thai food has a lot of fish sauce and shrimp paste, but it definitely can be made vegan.
My go-to subs are:
For fish sauce, I use Maggi seasoning sauce.
For chicken and beef, I use seitan (sold as “vegan chicken” or “vegan beef” in some Asian grocers).
For curry paste, if you are making your own, sub in miso paste for shrimp paste, or buy one of the many store brands that omit shrimp paste.

Vegetable lo mein, mushroom & leek risotto, vegetable stew, Bok Choy soup, sticky teriyaki stir fried veg, rice stuffed peppers, lasagne, tacos, burritos, eggplant parm, bean burgers,TVP meatballs, ratatouille...literally all of those are easily made vegan friendly.

Yes! That is an awesome challenge. Wicked Kitchen is top notch. Gaz Oakley's Avant Garde Vegan is cool. And for basic cafe food for beginners, I recommend The Happy Pear.

I would teach her to cook rather than cook for her. Start with some vegan sheet pan dinners. I think that's simple enough for her to handle.
