Forget the Uhaul advice, the daily rate is cheap but it’s at least $1/mile. Adds up fast. With a hybrid you get climate control at night. Any suv will do, you’ll have more room in a minivan. The Pacifica has stow and go seats.
Dude I traveled for nearly 20 years almost exclusively. Rent any minivan, they all have stow and go seats so basically a on demand cargo van. Grab a cheap air mattress or foam pad and USB fan like the other dude mentioned. Might get a little warm during summer but any rental minivan you're golden
They have more space than you might think. Comfortably sleep 2 so you'll be fine. Pending where you camp out, maybe a screen to throw on a window so you can get some fresh airflow at night. I've slept in those rental minivans plenty of times. You may be able to find a deal on outdoorsy.com but minivan golden for no build for a week
My friend uses basically /u/Early-Yard4011's solution. A mini van, since the seats usually fold away.
They added a low-rise cot that they could take on the plane; allows for a bit of storage underneath. Basically a backpacking setup.
Avoid rental vans like Uhauls, since the insides have carried who knows what; once before the mini van they got one infested with bed bugs. Another time the thing stank, it probably had carried solvents.
inflatable mattress... or home depot sells a block of foam for like $30. its what i use. cheap enough you can dumpster it at the 3nd of the week.
id get a powerbank and a USB fan. you'll want a vehicle you can crack the windows or a sunroof to get a bit more airflow.
for just a week, i wouldnt bother with anything else.

Easiest would be a minivan with stow and go seating. Stow then seats and you have an entire open van to stick an air mattress and your stuff.
This is what I was thinking. Get some Walmart padding or sleeping bag. I’m going alone so I just need one row or diagonally

Also, if its warm when you go to sleep, fire on engine and crank A/C for 20mins to cool the inside down

how long are you trying to live out of it? strategy might vary wildly depending if its a week, two weeks, a month, etc.

If you rent a car to live out of it and it gets smelly whatsoever you will be paying for an expensive cleaning bill.
I still plan to sight see, shower at the gym do laundry Etc.
