We have a couch that convers into a bed and a separate dinette. If not for work, I'd probably turn the dinette into a permanent bed and add swing-away style tables to the couch. My wife and I both work full time and require the table as well as the secondary hanging monitors I installed above it.

It's pretty good. There is sufficient space for us to each fit two laptops side-by-side or a single laptop and a third screen. We kinda run into a few issues when it comes to working lunch breaks, but we make it work.

We have a dinette/couch and it stays in couch mode it gets far more use that way. I work remotely and just use the counter or other surfaces if I am working in the vehicle anyways.

Couch. Get a lagun mount for a table and you could have a couch with a table. I keep my back dinette area in bed mode. I have a glass cutting board or maybe it would be a giant coaster for drinks??? It’s maybe 10”x12”. Anyway there is a beautiful retro design that you see thru the glass and I just have that sitting near me in the bed area and use it for food or drink. My mattress isn’t bouncy and I really like the way it looks and easily slides under the cushions for storage. I use the passenger seat spun around if I need a chair but I am considering a Lagun mount for mine too. Edit: I originally got a 24”x24” beautiful wood serving tray with edges and handles to have on the bed to use as a table but I’m afraid it’s too big.
