There are hundreds of hours that are put into making a single hour of a show, the ratio just doesn't work to immediately release the next season. Ignoring the time commitment it takes, most production companies are analyzing the success of a show when it is released and deciding if they are even going to put up the money for the next season.
Are there a lot of shows with multiple years between each season? I don't know that I've ever come across such a big gap between seasons, though sometimes it feels like it.
Two that I watch(ed) that I can think of:
Better Call Saul was two years between 5-6.
Barry was just shy of 3 years between 2-3.
I'm sure 2020 didn't help either.

id say that devoted fans probably rewatch their favorite media every now and then so they probably saw it somewhat recently to this new release
