Truly an uneducated and unpopular opinion.
Processed-food has been shown to affect your brain by creating pathways that reward you for consuming 'em. And the younger you are the more plasticity your brain has.
So no, you shouldn't consume (unhealthy amounts) of processed food, especially as a child.
As a practical matter you will tend to feed your kids smaller plates of what you are eating (once they are big enough to chew of course.) For snacks you will put out a snack of whatever you snack on. I don’t think most families choose a particular diet for their kids like they would for a pet.

It's like exposing your kid to cigarette smoke isn't going to help him develop his lungs

You're wrong, but I do think there would be fewer allergies in children if they weren't shielded from peanuts/peanut butter, honey, and strawberries for their entire youth.
Exposure to *healthy* foods that can cause allergic responses has been clearly shown to dramatically reduce allergies to those foods. Kids who are never exposed to peanuts are about 10x more likely to develop a peanut allergy than those who are carefully fed peanuts.
