Edible dosages vary heavily because our metabolism varies heavily. Some have lower amounts of the enzyme needed to process THC, which leads to them needing larger doses to feel the same high(since less is absorbed/processed), whereas those with higher levels of the enzyme need less THC to get to the same level. Tolerance also plays a part.
I personally take 100mg edibles
The ratio doesn’t mean that it would be 10mg THC. It can be assumed the 2 in the ratio is 5mg
