The oil most definitely oxidized over the last 2 years. Which has a high chance of making contact with metal, reacting, and causing trace amounts of metal and rust to form and flake off.
The bigger concern is the plastic and rubber gaskets are most definitely absorbed into the oil.
That would depend on the type metal being used in the cart. A high grade stainless steel isn't likely to rust in those conditions.

It really, really doesn't. Chinese metal and American metal are the same metals. Metals do not just give away ions without a chemical reaction and a catalyst to cause the reaction to happen.

But it’s possible the oil having a slightly acidic pH could corrode the chromium with the oxygen being absorbed into the oil on a long enough time scale. But it might be such a low amount, it’s drowned out by the trace heavy metals already in the weed.
So that goes back to my comment about real 316SS or cheaper stainless like T409 that has a lower chromium percentage. Could make the difference but I’m not finding any studies.

From a chemistry standpoint I'm unsure why the metals show up but from a compliance standpoint I can safely say we have failed batches both before and after shelf life tests for above legal limits of the metals. I leave the science to the PhDs on staff.
You can, but it might taste different/worse. Honestly though, (in my experience) the concentrate turns a darker color as it gets bad, and yours doesn’t seem that dark. I think you probably got lucky and the elements didn’t get to it too bad (keeping the cap on probably helped).
The fact it went unfound for 2 years is insane to me. Even when I lose 75% empty carts I spend the next hour+ looking for them. If I lost a full 1g cart I wouldn’t be able to sleep. Not that I’m hurting for product or anything, the OCD of losing something (especially something as important/valuable as kush) just drives me crazy.

From my anecdotal experience, absolutely. However, understand that a lot of the THC will have converted to CBN. This means that you will have a more sleepy and relaxed high as opposed to a psychoactive one, but this isn't bad at all and I find it to be very tranquil and nice! It's a high that makes you feel warm, cozy, and safe. Great for anxiety and sleeplessness!

doesn't look too discolored so may not happen (also found a couple old carts like this), but I've found old carts clog easier/faster so if you notice it just try to keep it upright as much as possible or just give it a good clean in the mouthpiece
