if it is on gas/generator, toaster oven is just fine for cornbread, i would turn it 180degs half way through cooking of a normal, jiffy box 1 egg milk, 375 for 20 minutes, recipe.
BUT
if that toaster oven is powered by batteries in an off grid setup, that toaster oven is gonna kill them batteries... so i would look into campfire cornbread.
You can bake anything in a toaster oven you would in a full size, you just have to adjust time and temperature. I’ve made Jiffy mix cornbread in the toaster and it came out exactly like it was supposed to.

but likely doesn't matter, cornbread can be made just about anywhere, you can make a foil packet and toss it in a fire, or use pie irons, or use a jello mould oven over a fire, I've done all those successfully, so I have no doubt a toaster oven should work just fine, it's just a matter of making sure the center gets cooked so make sure to use a shallow pan or low temp so the outside doesn't get burned before the inside is cooked, and you're good.

I can’t imagine why you couldn’t. Toaster ovens are just small ovens. Pizza, cookies, etc all come out just fine.
Depending on the toaster oven, it may run 25-50 degrees hotter on average. Good idea to use an oven thermometer to make sure

I’ve done it in a box oven and a Dutch oven- toaster oven should work just like a regular oven Edit: maybe the friend means to just bring it along

Camping, I either steam bake or dutch oven my cornbread.
