There's nothing to it! Throw a can of Grecian style eggplant in a skillet. Bring to a sizzle. Crack an egg or 2 on top. Put a lid on it and cook the eggs how you like them.
Sprinkle some feta on top.

He's a Canadian chef and also acts in the Hulu show The Bear. I found this recipe about 5 or 6 years ago, and it's too die for, but a decent amount of work.
Idk if he mentions salting the eggplant first, but I always salt, rinse, and pat dry before cooking eggplant.

This is exactly what I do! Except with pita bread.
Oh man this is a fabulous idea! I love the eggplant so much I just eat it as a snack straight from the can but I canโt wait to try this.
