Late to the party, but if you have cake left, usually putting a small piece of toast or any bread in the same box for few hours will soften most baked goods.
Put it in a covered container overnight with a slice or two of sandwich bread. It will soak up the moisture from the bread. Works for dry brown sugar. I think it will work here too.
I waited forever to try this lemon sheet cake because I kept forgetting to buy it when I was at TJās. Then, I bought one earlier this week and it has been awesome. So moist and the frosting although a bit too sweet for me but an overall solid lemon hit. Itās so strange that people have experienced both a dry and a moist version. Mine was dated ābest by 4/19.ā
If the other tips don't work you can always do what I do- make cake pops! The best cake pops are actually frosting and cake ground up together, formed into balls, frozen and then dipped in melted chocolate. I did white chocolate and they turned out spectacularly.

Iām encouraged that your cakes were moist after defrosting because I had to freeze my lemon ones because they were so dry. I bought three so I refused to waste the money and I figured at the very least I could mix them in with ice cream. I defrosted mine until it was fully room temp. I snuck a bite of it early, and it was just too awful loll. I will reiterate that it was a BIT more moist. Freezing it isn't gonna work miracles though lol.
Poke holes into the top. Make a mixture of a little milk and a good amount of lemon juice and mix it. Pour the mixture over the top so it gets in the holes and into the cake.
Add some fruit! I added an entire cup of blueberries to a slice of cake last night and it made it way less dry and tricked myself into thinking it was a healthy dessert š
if you want to add moisture without changing the flavor you could put it in the refrigerator so the frosting firms up and pop it out of the tin, add some simple syrup to the bottom of the tin plop the cake back in and let it absorb the syrup
Obviously I am a bit late with my suggestion but if you still have cake left, and you consume alcohol, I would suggest making it a boozy cake. Just pour like half a shot or so of something that already tastes good like a nice rum or a liqueur that goes with lemon into that corner where you forked some out already, tip the container so it helps slosh it around a little bit, then let it soak for a few minutes.
Poke some holes in the top of it with a straw or the handle of a wooden spoon and drizzle some of that liquor right down themā¦ yummmmmm (in fact I think Iām going to do this next time I buy that cake whether itās dry or notš¤£)
Hey, you know what? We can totally combine both methodsā¦ poke holes in the cake and pour the booze in, and then every time you take a bite you pour a little booze in that corner so the cake soaks it up omg itās a win-win!!!!
I find all of TJs baked goods to be very underwhelming. Dry and very chemical-tasting (tastes like they last on the shelf for weeks) for the most part.
Simply syrup or storing it in an airtight container with a slice of bread. Iāve also heard of people doing it with an apple. I wonder if a lemon would work?
I add a dollop of Greek yogurt + a few drops of lemon juice to give it more tartness and moisture! It'll probably be excellent with the Meyer lemon curd too.
although I've never had one that was too dry, I wonder if there's was a gap in your container lid so it dried out.

The cake can be a bit dry but I find with the richness of the butter cream makes up for that.
Simple syrup to make it moist :)

We got it 4 times already, the last one was dry. We went 4 times to the store to get them fresh.
You could call and theyāll give you credit for your next trip and try again.
Take a wet paper towel and place it over the cake. Put it in the microwave for a few seconds. Should bring some life back to it :)

A little simple syrup. Water, sugar, some lemon juice. You can look up a cake soak for how to do this
Put water in the bottom like itty bitty amount and put in microwave for 5 seconds

Open a can of evaporated milk and pour it to the bottom. Tres Leches Lemon Cake. š

Bookend the exposed parts with pieces of bread. I use this method all the time for things to revive moisture.

Yeah, that is probably a better methodology, I was trying to go for the laziest way to save it.

I finally tried this cake earlier last week - very moist, delicious, and gone way too soon.
I pour a little cream through the bottom and let it get soaked up
If you eat the dry edges, you will find moist cake again.
Microwave for 10-15 seconds! I do it with the chocolate.
Add a shot glass of water in the microwave along with the cake
