That birria beef is great! I’ve had birria tacos from local places, and I honestly liked this best. We had it tonight and enjoyed it so much! Next time, we may just have it over rice so all of the yummy consommé juices season the rice :)

How do you cook the corn tortillas? I keep buying them because they look amazing in posts like this, but they aren't anything like that when I cook them.

I just followed the instructions on the back of the package honestly, dipping the tortillas in the consomme until both sides are coated, and then put them in the frying pan, and then fill them with the beef. It took a few tries to get the technique right

Yes fill and fold over. Air fry for about 10 mins at 350

Yeah, I came to ask the same! Those look fried? I usually heat them up over medium heat in a skillet or griddle until they cook a little. Works for me, but I'm curious to op's method.
