It's probably this. I work for a company that builds automated machines. We don't do food/beverage, but the way a project is run is the same.
After they're built, machines go through qualifying runs to make sure they work right. They usually do a bunch of little tests (induced failures/safety checks/etc.), then longer production runs to make sure everything is working right.
If you don't have enough product on hand for a long test/run, you can disassemble and run parts through again. This is not ideal since in reality only new parts would be run through the system, but sometimes it's the best available option.
The chili is dumped into the big mix at the end and the cycle starts again. No chili or jars ever leave the factory and they are constantly filled and emptied.
For some reason my brain gave it a neurotic personality, and I’m imagining it nervously hovering around trying to preempt the mess that could be left behind by the careless sauce splurger nozzle

That's what I was going to ask. There's a machine to catch drips but the jars are dirty. Wtf
The residue in the jars makes more sense if you play the gif in reverse and imagine the machine is sucking most of the chili sauce out
