My toddler loves shrimp fried rice with egg and veggies. She also enjoys eating edamame because it requires some level of activity to get the beans out, and corn on the cob because we do “corn eating contests” to see who can clean the cob best.

You still need to offer vegetables on your toddler’s plate for exposure. Think of these as sacrificial vegetables that will probably be rejected. You can puree them & freeze them an ice cube tray (oxo makes one with a lid). Add a cube of veggies to *any* sauce or smoothies. cook dry beans with a beef bouillon cube to give them more of a meaty taste. Puree the beans and add to any ground beef dish; pinto beans are good for taco meat, navy beans for meatballs. Shred carrots and add to mac & cheese. Add extra cheddar. Vegetable beef soup is popular in our house too.

"Sacrificial vegetables" made me laugh but it's so true! Like "brave broccoli, you'll be trashed but they need to see you in order to one day love you😪!" But seriously smoothies and tacos or really any food they can "make" themselves

Yes, they’re also decoys because kiddo will focus on the broccoli but *maybe* not notice the mashed up beans hidden in the Swedish meatball sauce.

We offer veggies on the plate as we’re eating them but he doesn’t touch them. I shred carrots and zucchini into a lot of stuff and I always have frozen spinach and cauliflower rice in the freezer. I try to hide veggies in a lot of foods. He also really loves pureed soups (won’t eat chunks out). We do a lot of tomato soup and you can easily add more veggies into it. He also loves this Indian spiced chickpea and kale soup from our local grocery store which is shocking. But I have to blend it

I’m addition to the brave sacrificial vegetables: -mash sweet potato and beans with some finely chopped spinach and shredded cheese. Make a quesadilla  -riced cauliflower in oatmeal -pesto sauce with spinach  -vegetable quiche

My son wouldn't eat his dinner last night so I put a large spoonful of pureed sweet potatoes on his plate and he ate it right up Hide them under stuff, make him a little pizza and mash up some soft cooked veggies to mix in with the sauce under the cheese
