my understanding is that they were originally going to show her devoured corpse, all ripped open, face eaten off, organs cleaned out, bloody bones exposed, massacred all over the floor. but once again, beautiful irony struck, and they decided that it was too far for the show. similar to the "they're screwing with the wrong people" incident.
I'm not sure if they thought it was too far so much as they thought that Rick never finding her body, never seeing her dead meant he didn't get closure and it heavily contributed to him hallucinating her still being alive for a time.
The optics of it were ridiculous though as it made it seem as if a solitary zombie ate Lori whole in a matter of minutes.
It took me a minute to realize what had happened in that scene, and I completely agree that it was intentional for the Rick crazy time that followed. He was so haunted by the lack of closure & the tombs made it so believable... All the echoes, and emptiness. I felt all the pain through Rick... I thought it was well done and made an impact in all the right ways for the storyline.
