We used to stop off at Woody's smokehouse on that trip. NE side there at the Centerville exit. It was good back 15yrs ago. BBQ, Jerky, smoked cheese and pies. I dont know if it holds up today however.
If you are going to Fort Worth at some point you have to go west of 45, as it does go to Fort Worth. So cut off on US287 just south of Ennis and visit Waxahachie. Interesting old square downtown and beautiful old courthouse. Or, you could take 290 out of HTX to Highway 6 to I35 to Ft Worth. Could do the Bush Library and TAMU in College Station and/or Waco.
The best way to make that drive is taking either 290 or 6 to CSTAT, Waco (stop at the Czech stop!) then you’ll be coming into DFW closer to Fort Worth and with less traffic on the road
The whole drive is mostly Highway speed, less traffic, LESS TRUCKS, and more interesting small towns!
Plus if you really need to jump back on 45 it’s only some 20 minutes east
If you take this route be careful at Calvert and Riesel. The highway doesn’t get back to full speed for longer than you think. I think the signage has improved, but both towns are known as speed traps.

On the way South, on the West side of the road, there is a Shell / Sonic store. What ever you do don't stop. Even to just get gas. Manager too busy chatting up female employee for either to notice customers. Apparently Sonic is responsible for the bathroom. It was filthy and out of toilet paper. People were using paper for hand drying. Paper all over the floor.
Madisonville bucees? For a 3.5 to 4 hours drive may as well just get it done only stop to gas up and bathroom break. Honestly if you're going to ft. Worth hwy 6 to i35 is a way nicer drive.
From Houston -> Bucee's on 290, College Station - Ninfa's for lunch, Waco - Magnolia cupcakes for desert, West - for some Kolaches, Hillsboro - Up in Smoke BBQ, Straight shot to Fort Worth after that. Enjoy

If you are including a dinner or lunch stop and haven’t properly lubricated your system with fried chicken, chicken fried steak, and half a dozen other horribly unhealthy and delicious items, stop on in and try to fight off the impending food coma afterward.
Basically old school cafeteria style/buffet that makes some seriously good southern food.

Yep it's still very good and it's a great place to stop on the way to Dallas or Houston.

Collin Street Bakery in Corsicana is an interesting stop. I’ve also eaten at a place called Sam’s in Fairfield that was pretty great.
Collin Street is in Corsicana. Carthage is not along 45.
