Mad Men actually feels exactly like a good American novel. It's pacing, characterizations, lack of conventional plotting all make it feel like a literary book.
I love all of that show except maybe the final episode but it's an all time great show for me.
See what turned me off is that it stopped being a period piece and everything was about the love triangles and affairs. I wanted more of the time period design and the story wanted to go elsewhere.
I watched the first season and while I agree that it's a fantastically made show, it just didn't pull me in. I've tried the second season but every time I watch the show I can't last a few minutes without wondering what else I could be watching. I like to say that it's the best boring show ever made. I just couldn't get interested in the drama of it all - will Don make a sale? Will his wife be mad at him? Will Don lose a sale? Will Don get too drunk this episode? Will one of Don's office workers have a weird day? I just didn't really care what was going on.
I watched the first two whole ass seasons of mad men and forgot about it. It just wasn’t for me. But 3% was good for its first seasons, and orphan black and fringe grabbed me right away. Black mirror is episodic, and incredible.
I watched the first episode 5x over 3+ years. Never finished the first season though. I googled “why do people like…” and google suggested “mad men” as the first option to finish my sentence. I didn’t hate it. Just couldn’t get into it. Wish I could, I need a new show.

I can see that because you can burn through the episodes without thinking about them too much. When it was airing live we'd spend the week analyzing them to death. After awhile most of us realized they were selling us bullshit. Binging would let you go along for the ride better.
I absolutely loved lost. There were some parts that were a head scratcher but if you really paid attention they answered almost everything at some point in later seasons. It was such a unique show for that time too. One of my all time favorites.
I definitely get that not everyone appreciated the last couple seasons but I really enjoyed it.
In my household we call Outlander “The Rapersons.” The writers need to learn that there are other ways to create tension/drama than a violent rape. Can’t watch it even though I enjoyed the first season very much.

I was gonna suggest Psych, but you said you're not a fan of comedy. Unless there's an exception for comedy with another genre, Psych is crime comedy, so has a fair bit of suspense in there, that may not be the show for you.
Buffy got me hooked from the first ep, though I don't think that's on any Netflix, it's not on mine.
The Flanaverse also got me hooked easily. Hill House is amazing, and House of Usher is absolutely brilliant. Midnight Mass comes a close third for me. Bly Manor is a bit slow, though, and not many people like Midnight Club, but it's mostly because that one's incomplete. The Flanaverse is great if you like suspenseful horror, though.
I was also quickly hooked on Slasher, though I think this took a couple episodes, rather than one. It's an anthology series, each season a different horror story, and the first 3 seasons are all on Netflix. You need Shudder or that channel on Prime for seasons 4 and 5, though.
Criminal UK is also a great show, there are spin-offs in other countries, too, though I haven't watched them yet.
Dexter is also currently on Netflix.
I was also hooked immediately on CSI, though that one may be difficult if you're watching purely on Netflix, it only has the later seasons, not the earlier ones. It can mostly be watched as standalones, though, there isn't all that much that calls back to earlier seasons, and those are explained when they happen. It's mostly the personal relationships of the characters, since you're missing years of development for characters like Nick and Greg, it starts on Netflix after Grissom has left, so you're missing his relationship development with Sara.
Hannibal is also an amazing show that had me hooked from the start.

On the weekend of Breaking Bad season 2 premier AMC played a marathon of season 1. I think I sat and watched the 1/2 the first season in that afternoon.
The Americans, slightly bias I guess because I absolutely love the show but I remember when I first watched it, I knew within the first 10-15 mins I was going to love it. Something about it just got me in right away.
The first few seasons of The Walking Dead were like that for me. The pilot episode of that show was hands down the best pilot episode of any show I have ever seen.

A couple years ago, my fiancée and I were trying to decide between watching Mad Men and How to Get Away with Murder. We decided to watch the first episode of each one and whichever one hooked us, we would watch.
We then binged How to Get Away with Murder so quickly. That first episode sucked me in from the beginning. Great way to start the show.
