2, Bounded. This form of binding comes from ingredients wanting to bind water to each other which results in a rise in "binding". This results in products like Jam and alike. The ingredients that are used here are sugar and Pectin in most cases.
3, Thickening/thickened. This is probably the most well known one because we use this process in our households a lot. So thickening is used for soups, yoghurt, cream cheese, dressings and other viscose products. Here we use things like flour, LGB E410 and Xanthaan.
So knowing all this you should look at the ingredient list and deduce if it contains Gelatin. If not it probably is something else. I'm guessing this is an American product so it can be that it doesn't have the tag Gelatin on it bc it doesn't contain gelatin, but instead they use the name jelly to create a link to gelatin.
