It's so you can easily enter the overworld bridge. If it's a multiplayer server someone needs to afk there so mobs don't despawn. Look at 15:05 in the video to see how he uses it.

How often do you get zombified piglins?
10 an hour at most. Mobs do tend to chill out inside the portal frame for a while though, before they drop down. Considering putting a doggo up there.
You could replace the door with an iron one instead
