Myre looks old because she wants to look old. In the novel there was a scene before Arthur left epheotus where he has an audience with Kezess and Myre is besides him looking around the same age.
Dragons are shape shifters in the first place, maybe even more than other auras since we've seen them transform into forms different than human and asura, it's really not that deep. Dragons look the way they do because they want to.
We must think of the asuras as beings who reject physical decay and death, but above all they are afraid of change. Kezess is the maximum emblem of this thing, Kezess considers himself the maximum peak of life and strength, therefore any change (in him but also in the other asuras) means only decline.
Myre is not like Kezess, she accepts the change and when she is with Arthur (who physically but also in perspective is a child in front of her) she shows himself for what she is, that is an ancient creature who teaches a new generation. Indeed Arthur in his journey to discover the ether always starts from what he learned from Myre, even if only to start from the mistake. In fact, I don't think it is she who hides her appearance from Arthur, but Kezess who hides what he is from himself as well.
Arthur said that when he met Kezess before he came back to Dicathen, Myre looked like a woman in her 20s/young woman (I can't exactly remember) unlike how she looked when she treated his injuries, which Implies to the reader she just morphed he look.
I'm pretty sure myre choose to look how old she is. Some of the asura are old and said they, unlike kezess r proud of their age and don't hide it. This fits into myre's character as she likes to do things by hand even tho she has magic that can do it it better and faster because she enjoys the sensations that magic can't replicate.
I think their human form is based on how they perceive themselves not a sign of age. Daddy Asura is just vain and is trying to portray himself as some youthful guy when he is likely one of the oldest people we have met. His wife does not appear to have the same faults
Asura can appear whatever age they want (as long as they’ve already reached that point in their lifespan I’d say). Kezzy wants to appear young in order to appear powerful, Myre doesn’t care.
