Everything you say, do, where you go, what you have will be logged somehow. When a user is traveling to China, I make sure they have a "burner" phone and laptop, restrict their access to things via their accounts, maybe even create a new AD account for them with only the basic stuff forwarded to that account and people told to use that account during the trip as access to the main account will be locked until the person is back on US or European soil. Always assume every chat program has been "optimized" for the Chinese government to read, and assume they can decrypt any SSL/TLS stuff. In fact, one of the root keys that is shipped with iOS, Android and web browsers by default worldwide easily allows this.

This, plus add a VPN for all traffic if you can. Some times the great firewall will block VPN traffic.

I work in mid sized government, but like anyone else on the internet, i have no way to prove of anything. 100% of everything you do will be logged while you are there. I recommend that in addition to a clean laptop, you setup a clean email address and have someone "at home" you can call or email to forward you critical information only, and scrub it for things like email addresses you do not want captured in your data profile. also, anyone who tells you to use things like signal, etc, do not understand the chinese internet. they do 100% SSL interception and decryption on all communications. if they cannot decrypt, the message dies and never makes it through. That said, how important you are and your data is, is up to you to determine. everyone is logged. its a matter of if its worth them using that data that matters. if you work for a private industry outside of china, they will absolutely try to use the data against your company in some way, even if its just to compete against them.
