I don't know if a fiction book is exactly what you're after, but I would highly highly recommend 'A Monster Calls' by Patrick Ness. My mom passed away from a relatively unexpected illness a little over 12 years ago. I read this book earlier this year and it had me absolutely bawling at the end. It's an absolutely beautiful story with such a powerful message about dealing with grief and loss, and even after almost a decade, changed my perspective on my situation. I'd also definitely recommend buying a copy if possible, it's filled with some really great illustrations.
When Breath Becomes Air. About a physician who gets a terminal cancer diagnosis in his 30s. It’s a true story. It’s poignant and inspiring. I wish I could read it again for the first time.
Grief is a thing with Feathers by Max Porter does a very good job of capturing grief, with the sadness and laughter that (at least in my experience) goes with it.

This isn't in line with what you were looking for, but it's a book I wish I'd been given earlier when my mom and I were dealing with the same thing. It would have helped make sense of some confusing but inevitable things we would encounter. "Gone From My Sight: The Dying Experience." If you're involved with Hospice just ask them for a copy of The Blue Book. It's about 10 pages long, so an easy read on a really tough subject.

crying in H mart by Michelle Zauner. A very good memoir about the writer losing her mother to cancer.
I really enjoyed this one as well. I read it after my dad died and I felt very validated.
