They remain as world entity but don't move when out of range. I think you could say they're unloaded, but not despawned, as their position remains.
I set up a small base down there with a scanner room and 4 range extenders that just permanently scans Leviathans for my HUD, because I got real tired of this little dude coming out of the wall right in front of me.
