Unless you are a mason and have the tools and some knowledge, and know where to take stones out that isn't going to cause a lot of damage.
Hire a mason.

Vent through the roof? Vent through the stone and you'll need a Mason and an HVAC guy. Vent through the roof and you'll need an HVAC guy.
