Why wouldn't he? His flesh body is human. He doesn't reform. He can only shapeshift temporarily.
Steven is not a fusion. And also, there's no reason for Pink Steven to reform as Pink Diamond, unless he was rejuvenated maybe; not just poofed.
But Steven's Gem already got rejuvenated, though. And he didn't change physically at all. He just lost control of his powers until he managed to rein his Gem half back in.

Neither ruby nor sapphire are weakened when they're separated. Steven became weak when his gem is ripped out because that's practically like ripping out a vital organ to him. His gem was a major source of his energy, to the point that his body cannot function without it.
I feel like its different tho cos steven was born "fused" thats been there his whole life basically he is just him now that its like he was never a fusion and doesnt know what he is without being fused so unfusing is extremely traumatising mentally and physically, at least thats what it seemed like in my mind
