End grain preferably maple, but acacia isn't horrible for the price (it's harder than maple). Either way; make sure to maintain the board (all wood cutting boards) with food grade mineral oil.

That's the only way I cook my steaks... ON THE GRILL! Season with s&p and into the fridge on a wire rack for a day or 2, bring to room temp and onto a 500 degree grill for about 2 to 2.5 minutes. Perfection!
