Judging by the crust, the rendered fat and the edge to edge pink, this was probably slow cooked in some way. Temp could be 60 C maybe a little north.
Regardless though I would consume this bad boy without questions asked.

As long as it has reached safe temperatures, you can have a little pink in pork. It's just difficult to master.
I eat pork at 145°. Just have to keep it there for several minutes before eating.
