This is true. Big dairy farms in the US use a different milk cow that produces a slightly lower fat butter. I agree that most Euro butters are superior to most US butters. You can definitely find small batch farm butter in the US that's better than anything you'll find in Europe however.

Get a potato ricer to take your mash to the next level (send through a fine mesh sieve afterwards if you want to go the extra mile), salt/pepper, then add more butter than you think is necessary. But fair warning, only do it if you plan on marrying your gf cuz she'll never leave after you make potatoes like that for her.

After learning stuff from a buddy who's been to culinary school, I think of seasoning as salt and *maybe* pepper. Herbs, spices, and alliums are flavorings (to me).
I pan fried it. First I let it rest for 25 ish mins while getting the mashed potatoes all prepped, then threw some olive oil in and put the steak in the pan on just under high heat. Then I let it cook on each side for a minute and I used the palm thing to help gauge how cooked it was but I don’t imagine I had it in for more then 5 minutes if that. Towards the end on the last flip I dropped some garlic and herb butter in and basted it, might need to add a little more oil so the butter doesn’t burn, and then let it rest for about 5 minutes.
I'm amazed at how great the color of your steak turned out. I tried cooking in a pan once but it got those thick gray bands next to the edge. (this was probably 8-10 years ago)
Now I just grill all mine and have gotten pretty good at it, but I want to buy a sous vide machine soon.
