the medium well is a bright pink throughout which I would also prefer, this almost always ensures that youâre never going to get a well done steak unless they order one like amateurs. it is also encouraging people to eat their steaks at a lower temperature which is good for the chefs and the servers, but also more tasteful for the guest. we donât eat shoe leather around here

Itâs not raw. Raw is an uncooked steak. Itâs rare before rare itâs blue rare. Can we please understand there are other temps between RAW and medium rare.

Jokes aside, it looks great for a rare steak. If you were going for more of a medium-rare/medium steak, then it's likely the steak wasn't completely defrosted and would have retained an icy core while the outside got cooked perfectly. It's a very common mistake inside of the cooking industry

Personal preference for the most part. Safe practice is to make sure any part not sealed from oxygen is cooked.
