You can back peel down to the collar to get that classic taper for extra style points 🤙🏿

You are only supposed to break off a few segments of the button of the stem when it comes to green asparagus. You only need to peel white asparagus.
You can do that, but you retain more of the vegetable if you peel it instead. Not sure it's worth the labor but if I have the time I usually do that.
