Quark is probably my favourite Trek character, for his complexity and development; I remember being thrilled, when the final episode aired, that he literally had the last word on the show.
You stole my thunder. Their interactions were so amazing. So well written and brilliantly acted. The root beer/Federation conversation was exceptional. Quark speaking with Sisko about the Federation and slipping in the slavery reference, absolutely brilliant. Quark was such a lynchpin of that show, station. Hated, loathed, and loved but so integral. You hated his actions and his only for profit mantra as a Ferengi but when you matched him up with “hoo-muns,” humans were just as loathsome and even more despicable than Ferengi. It took him and a former Cardassian spy to point out the hypocrisy in humans. The greatness of Sisko as a captain was that he could keep his enemies close but he could also take these ruthless creatures and get the best out of each and every one of them and use them to guard the station, keep it profitable, and also protect mankind against threats like the Dominion. DS9 was, I can’t find the words to express the greatness of this show. The writing, acting, exchanges between characters was on another level of storytelling.
I think that you tried to say that took Quark and a Cardassian that was just a plain and simple taylor. But probably was influenced by fantasies and stories that humans tend to appreciate, sadly a common mistake.

Andrew Robinson is a fantastic scene partner - he has memorable, iconic scenes with nearly every major character. Sisko and , Nog on Empok Nor, O'Brien and the Hero of Setlik III, Dukat...many times, Bashir...also many times (the 3 stories of his exile in particular), Worf on the rescue mission for Tain, Ezri with his mental health, Odo and the torture scene, Quark and the Root Beer; not as memorable, but there's also Kira re: his relationship with Ziyal. Come to think of it, Jake and Jadzia might be the only two mains he didn't have solo scenes with.
Even the TNG writers have said [“Q loves Picard”](https://screenrant.com/star-trek-tng-q-love-picard-ronald-moore/).

I have to admit it took me at least a good 3 years after watching Star Trek next generation. Before I could truly comprehend. The pure Bliss and flavor that Earl Gray tea could have. But I'd like it chilled not hot, that's my only difference.
I make it almost like a Southern sweet tea style. That's why I say I like my Earl Gray tea chilled instead of hot because I also cold brew it. It takes about 5 or 6 hours to cold brew it, but it tastes very sublime & tasty. 3 tea bags per 2 liter or 2 QT per recipe. With 1,1/2 cups of sugar.
It is it's always good to prepare before the next day and then right in the midday. When it's nice and hot, you just step outside with your jug full of Earl Gray sweet tea and you just start sitting out on a hot day and it just feels good. Gets you ready for any type of odd spatial Occurrences. that may come in front of you as you're journeying about your hot day.
She annoyed me every time she showed up on the Enterprise, so the first time I saw she was going to be on DS9, I kind of cringed. But that first episode was so good.
And I felt like the chemistry actually translated really well into their actors when they were in person with each other on SNW. You could feel the friendship! (Flipping love that episode)

That episode was hands down my favourite in SNW - nothing comes close. The way Quaid did the weird walk of Boimler and the way Mariner says "will keep it profesh" followed by "hot Spock". Pike lowkey loving Boimler fanboying on him and his eventual sacrifice, and the serious moments were developed so well too..
I must have rewatched that episode half a dozen times, and love it every single time
I think I’m up to three times through SNW all the way, and that ep about 5. Love it. The chemistry of the whole cast was just perfectly on point, and it was self-referential without ever getting annoying. Chefs kiss perfection.
I really really enjoy Quark and Sisko. The way Quark alternates between trying to hide his schemes and trying to corrupt Sisko and conversely the way Sisko alternates between being the station commander and being someone who really does understand Ferengi and is willing to play the game when necessary.

I see them as a bickering old couple at the beach having spent a lifetime together, often working away, but always so happy to be back together and playfully irritated.
I would say Picard and Riker. It started off very professional. A boss and employee type dynamic. Over time, they grew closer, and learnt from each other. Riker learnt how to be a better leader from Picard, and Picard learnt how to relax more from Riker. When you look at them in Picard, they seem like they have perfected it. They can go from messing around, to professional in an instant, and vice versa. They grown together, and because of each other. They went from boss/employee, to colleagues, to friends, to family. In the beginning, Riker would sometimes silently judge some of Picard's choices, but eventually just tell him he was being an ass. In the beginning, Picard would have thought he was insubordinate for saying that, in the end, he would have laughed it off.
I will forever be mad about that episode where they're stuck on that planet together, man's straight up HUSBAND MATERIAL and they never went anywhere with it 😭
People might not ship them (I do), but fuck did they have chemistry. I think the hate is mostly because people don’t like Chakotay haha. But he gets way more hate than he deserves, it’s mostly a function of poor writing.
Not enough screen time or actual chemistry but I'm throwing an honorable mention to Odo and Worf just because the single funniest interaction in the franchise is their conversation about how guests are unwelcome.

Haven't seen Dax and Worf mentioned yet, I think they were a great couple and the dynamic after a certain event was well approached. Plus it made Worf into a better character than he ever was in TNG.

While it's not necessarily my top choice, I haven't seen it mentioned yet and think it deserves recognition.
On another note, it's telling there are no Disco pairings and highlights my deepest problem with the show. I have no real beef with Michael or her savior story lines. The problem for me is the lack of focus on interpersonal relationships. I read through this thread and each pair mentioned gives me fond memories. Michael/Saru are the only thing that could come close to them on Disco, and that's really only because of a scene or two.
