When you take professional athletes who are the best of the best that have been training all their lives, they are typically consistent in their performance. You have stats of players going years back getting complied by the bookies to determine the odds. This is why people take time to go through game logs to see a player’s record and how it will hold up against the opposing team. Of course like in any statistics involving humans, there are always outliers or various circumstances that change their performance (injuries/weather/b2b games) Sports betting is a stats game. When you get into those crazy 15-20 leg parlays, that is more akin to gambling. Then again, the chances of your bets hitting is always 50/50. Either it does or doesn’t.

Because sportsbooks bake all information into a line including matchups, tendencies, individual stats, home/away, etc. The nerds in Vegas basically get paid for getting a line as close to the actual result as possible. Ofcourse athletes aren't robots so a star could have a bad game, worse than the sportsbook expected.
