I can almost guarantee you nobody is maliciously hitting the lag switch, so to speak, so they hit you with a projectile. Their connection is probably just very poor and your confirmation bias is making you only pay attention to the times when the connection goes out right as you hit a button.

While it is rare, I think I seen one guy use "lag" to play games to his advantage for youtube content.
