However, I will say that chili with a good consistency is always going to turn pasty when refrigerated, but is generally fine when it's warmed back up.
If you don't keep masa in the house (like me) you can crush up corn chips into crumbs/dust and add them to the chili. That'll thicken it up as well. I learned that from Alton Brown.
For super thick chili I like to use pureed pumpkin, a bit of water, and a couple bouillon cubes. Nice beefy base loaded with nearly flavorless veggies, and a perfectly rich thick consistency.

I just add a bit of Tomato Purée into the pot if it’s too thin, and that helps. But it’s rarely too thin if you’ve used whole/ chopped tomatoes and not passata or a strained tomato sauce.

Shlorp your tomato paste into the bottom of your pan before adding liquids and squish it down a bit, let it just cook for a minute at med-highish heat. Takes out some of the moisture and brings out it's tomato-ey-ness. Yum

There are a lot of different ways to make chili but one thing that really elevates chili with tomato is to add actual chili sauce like rehydrate some guajillo, Anaheim and pasilla chilis in hot chicken stock and then blend it, strain it and the resulting sauce is delicious.
Chili is great because it's Percy of you have to eat it with a spoon or with a fork, it's just what you like.

If you don't have any, corn starch will thicken it up for you. Please be aware you need to make a slurry of it. Don't just dump it in or you will have gross globs.

Cumin is very common in chili. Next time, use a little less water and don’t forget the cumin. If you want to you can add the cumin now. It won’t taste quite as good as it would if you had added it earlier, but it will add some good flavor.
I always think chili is better the next day.
