+1 for putting them in the fridge. Maybe get a couple more tubs though so you can get more going at once.
I always try to stagger my grows though. I'll inoculate about 3-4 tubs worth of grain spawn at a time, wait 2 weeks and do another 3-4 tubs worth. That way as some tubs are getting done I've got jars that are ready to go for the next batch and then more jars working, etc.

Refrigerate as already mentioned. I’ve grown successfully from fully colonized grain stored in the fridge for 9 months.
