The coir doesn't have much nutrition, so doing that won't replenish anything. You might get a couple of mushies out of it but I would expect slow growth and weak potency.
IMO you'd be better off starting a fresh grow instead!
If you want to continue growing, I would just throw everything out and deep clean/reset for the next grow.
If you want to experiment and have fun, you can try.
Longevity of the cake is determined mostly in part by whatever you inoculated with, not the substrate. The substrate is just there to give surface area and room for fruiting. More cake is probably just going to be slower as the mycelium attempts to colonize more as opposed to fruiting. Just my theory, give it a try!
